Very simple achievement.
Leather is dropped randomly by cows. So craft a sword and go cow hunting. When you eventually collect the leather one inevitably drops your achievement will pop!

Is there a number you need? I have two that I punched out of cows but the achievement hasn't unlocked. Do I need to do something with the leather after picking it up? Do I need to use a weapon to kill the cow or were my fists OK?

It should unlock immediately after picking up a piece of leather by any means. I believe I used an Iron Sword personally. There might be a connection issue or Service issue with XBL. The achievement should unlock eventually if you met the requirements.
I have had achievements glitch on me in the past but this wasn't one of them so i can't speak specifically to what issue is causing yours not to unlock.
