Diamonds are found below Y level 16. You will know it when you see it- it is a light blue ore. You need an iron pickaxe to mine it.
Additionally, if someone throws a diamond at you for the Diamonds to you! achievement, you will unlock DIAMONDS! when you pick it up.

I dropped what I had found in an abandoned mine in peaceful, survival mode, backed up several feet then picked them up and I got this achievement.

This achievement pretty much became more easier all thanks with the new experimental for 1.17. You can find diamonds much more easier now if you go deep -50 blocks you will only find diamonds and rarely iron,coal and gold. I manage to get almost a stack of diamonds when i found a cave deep below. they made this game too easy now. unless i got a lucky world generation but i tried to make a new one and still the same results and this can be said with netherite. I manage to find a block of netherite in a chest and 2 of them in some blocks. So i don't think im that lucky.
