How to unlock the Great View From Up Here achievement in Minecraft - Definitive Guide
Shulkers are found in End cities. They look like purple blocks, but when you get close they open up and shoot at you. When you are hit by these projectiles, you float up very slowly for 10 seconds. you need to get hit by at least 7 or 8 well spaced projectiles to float up for 50 blocks. I found it easier to start about halfway up the main tower, as there are more shulkers up there, as opposed to on the ground.
Note: If the shulkers are in bad positions, mining the block they are attached to will cause them to teleport. You can try to utilize this to get some closer together, but I didn't need to.

Just like the other xbox versions, you can throw ender pearls high up against the buildings after getting levitated to unlock this. Takes like 2-3 pearls.

For this achievement, first you need to find your way to an End City. To do this you must defeat the Enderdragon, which will open up a portal around the edge of the small island leading to the outer islands of The End which are 1000 blocks away.
Once you reach the End City, you will find Shulkers attached to both the inside and outside of the towers. The Shulkers will shoot a projectile at you which will cause you to float upwards for a few seconds. I found it easier to go up the outside of the tower, as that meant i didn't get caught on anything, and then landing on the roof once I'd gone high enough. Apparently you can also throw a spare Ender pearl high up the building once you start floating although it was easy enough that i didn't need to do that/didn't try it.
Finding the End City's can be difficult and you can find yourself wandering for hours without seeing any at all, therefore i have put the seed i used below with the locations of some End Cities that i found. The End portal is quite far away from the spawn however, but if you are stuck, or like to plan ahead, you could try using this.
Seed: 173100852
End Portal Location: 4605, 36, 2118
End City -1900 , x, -200
End City -1484, x, 650
End City -2450, x, 332
End City 417, x, 1068
End City 670, x, 1300
End City 1400, x, 723

Easier said than done to be honest.
You will need, a few ender pearls (up to you, as long as it's more than one or two, I'd say at least 5 or 6), building blocks (probably 4 or 5 stacks of whatever block of your choice, better if it's not affected by gravity) and two water buckets.
1. Kill the enderdragon (gives you an achievement if you haven't done already)
2. Go through the Exit Portal (a wee bedrock thing in the sky, has purple beacons shooting out the top and bottom), will need an ender pearl.
3. Once through, find an end city
4. Try to get to the roof of the tallest tower, if there's a shulker there, youre in luck, if not, tough break, you're probably going to need to find another.
5. If your tower does have a shulker on it, surround it with blocks (seriously necessary, as these bastards, like anything involving the End, detest water) and flood the roof by making an infinite water source (to prevent fall damage).
6. Make a tower that's way over 50 blocks (don't want to send an ender pearls over the top of it and waste a pearl)
7. Drop down into the flooded roof, and flick your game mode from peaceful to easy (if you've been in easy difficulty or higher the whole time, hats off to you). You WILL be hit by the Shulker Projectile immediately so have the ender pearls ready to go.
8. Aim as high up the tower as you can once you've been hit and throw. Hopefully, you've managed to throw it and hit the tower high enough for it to assume you've floated up 50 blocks.
9. Once you've hit the water at the bottom, get to the back of the tower and quickly flick it back into peaceful mode, which will stop the Shulker attacking you, by now the achievement should have popped, but give it a few if not, this game likes to take a while in registering the fact you've completed the requirements. If the achievement hasn't popped, keep going until it eventually does show up, constantly flicking between easy and peaceful.
10. (I guess) you can keep the tower up for future reference so you don't get excited over finding a new End City, just to realise you've already looted it.
Possibly the easiest way to unlock it, and likely, it'll be your final achievement for your 100%, as it was in my case.

If you are having issues getting this achievement please do what I did:
- got to the end city in the tutorial level (I hear its guaranteed in tut level)
- build one tower thats 50+ blocks high near the Shulkers (square looking purple enemy that levitates you with it's attack)
- pour a bucket of water on the top of the tower and it will trickle down to the bottom
- get hit by the Shulker and swim up the tower of water you just built
- sprint-swim up the tower and boom! Achievement is yours.
For this method, you do NOT need to use ender pearls to teleport so you can forget about that random chance of getting knocked around and it not going where you'd like.
You can also use LADDERS to sprint climb up the tower if you do not have water.

If you are in the Ender, you have the Elytra.
If not, find them, you won't be able to live without them.
Take rockets (without fireworks stars) with you and when a Skulker shot hits you, look up as much as possible, activate your Elytra with A and fire a rocket!
Easy!
