How to unlock the Top of the World achievement in Minecraft - Definitive Guide
Alright I found a method that is a lot less timeconsuming. You'll only need 6 bamboo, which can be found in a "Bamboo Jungle" inside a regular jungle. If you're struggling to find one like I was, start up a new world select Jungle Temple as a seed option. This way you'll spawn in near a jungle temple which will likely have bamboo in the chest as well as string from the tripwire.
Gather at least 3 stacks of dirt, and head to the highest point near you. Then start building up with dirt. The max height is Y:256. When I got close, I placed scaffolding as the last few blocks to get to max. Around a minute later, the cheevo popped. I did break some scaffolding and replace it a couple of times, idk if this is necessary.
You should be standing on a scaffolding with the Y coordinate being 256.
Lemme know if you have any problems

BulletLukey has made an awesome world for this. You can join our realm (as long as it still runs) or download the world yourself.
In this world, simply go to the update 1.8.0 area, and place one scaffolding on the scaffoldings already there (255, so one more will reach the world limit)

World limit was updated and seems to be around 320 now so take alot of those scaffolding cubes and stack them up. Noticably if you are not fast enough they collapse under you if you if you are building above the older height limit.
On the achievement world i build up to 320 so i got the height limit message in the top corner and then collapsed back to 255 and build it back up 1 more so. After that i got it to pop for me.

The build limit for bedrock edition is Y:320.
Scaffolding requires 6 Bamboo and 1 string for 6 scaffolding.
You can hold A spam LT as scaffolding stacks without requiring line of sight to the top of the previous block. You'll see a message "Height limit for building is 320 blocks" - continue holding A to climb to Y:320 and the achievement will pop.
Take an ender pearl to combine this achievement with Beam Me Up (Travel 100m from an ender pearl throw).
