They can only be killed using the Sunray spell, which you get in the graveyard.
Find the shrine, use your detect kuji magic spell to find it, and get the Sunrays spell.
Once you get it, you MUST kill all the ghosts with the spell. Once you kill the last ghost, the achievement unlocks.

These ghosts can only be killed with the sunray spell, you get this from the shrine in the graveyard area.
You can find the shrine with the detect kuji magic spell and follow the butterflies.
Once you have obtained it, use the sunray spell on the ghosts, they drop blue orbs which will refill your stamina bar so you can keep using it.
Defeat all the ghosts (there is about 10-15) and the trophy will unlock!
Cauchy
In the level "Haunted Forest", you will come across a graveyard where you learn a sunshine spell. Use this spell to defeat all of the enemies in the grave yard. You can only defeat these ghost with this spell.

Only on Level 7
Story related and cannot be missed.
Once the ghosts appear in the graveyard, take the stairs to your right. You will find a gazebo where you can find an Anemone flower. The shrine is behind it (use your Detect Kuji Shrine spell if you're not sure). You will get the Sunrays spell, that you will need to kill ALL the ghosts on the way to the Night Castle.
Once you've killed the last remaining ghost, the achievements pops.
If you're getting low on Ki energy, either backtrack and don't touch the controller for a minute or two (Hiro will start meditating which will restore your Ki faster), or use a Flask of strong ginseng.
