Ugh, fifteen completed courses and only one avatar part. And from an eight part avatar one too... Not the kind of RNG I like.

When opening a chest if you don’t get what you want, quit to dash before you collect the items and then restart the game and you’ll get another crack at the RNG. Keep rinsing and repeating until you get whatever you need

Every time you finish a Tour, you will be awarded some coins and a treasure chest. There are Common, Rare and Epic treasure chests. These contain 2-4 cards, with random rewards. Rewards can be more coins, or parts for Balls, Trails, Hole Effects or Avatars (collectively we will call these Items).
Items come in different rarities as well - common, rare, epic and legendary. In order to unlock new Items, you will need to collect multiple cards of the same type. In general, the more rare an Item, the more card parts it will need. Furthermore, more rare the chest, the more likely you are to get a card part for a more rare Item.
For the purpose of the Items trophies, you will need to collect a full set of cards to unlock one of each type of Item, then go into the customization menu and purchase the Item. It does not matter whether you get a 3 card common Item or an 8 card Epic Item.
The problem here is that card parts are completely random. You may complete a full set of a dozen different Balls before ever getting a single Trail card. It doesn't matter which Tour you play, Chests are random (you can even get Rare/Epic Chests for losing a Tour). The only option really is to keep playing Tours and hope for some good luck.
Now there are a couple of things to keep in mind - if you have 1/3 Card parts for a particular Ball, you are much more likely to get parts 2&3. This helps to complete a set once you have started. You probably won't get parts from multiple different Balls on the go at once.
You can use this to your advantage if you have only one Item type left. Lets say you have collected a Ball, a Trail, a Hole Effect, but still need an Avatar.
When you complete a Tour and get a Chest (preferrably a Rare or Epic chest), you can open it and see the rewards, and if you don't get a Card you need, close the game before leaving the rewards screen, then relaunch the game. You will be at the menu and the Chest will be sealed. You can repeat this process over and over - the Card rewards are random each time - until you get the part you want, or at least get a Card for the Item you want (in this case an Avatar). Once you have at least the first Card for a particular Avatar, you're more likely to get the next Card parts from future chests, or you can use the above trick to force the game to supply the Card you want.
It is a bit time consuming, but better than playing dozens of Tours to keep getting more Ball cards.
