How to unlock the I'm Walkin' Here!! achievement in MLB The Show 21 - Definitive Guide
Description and picture graphic suggest you need to get this while hitting, however I got this by playing exhibition online against a friend and as the home team I gave him 8 straight intentional walks, which ended the game but more importantly unlocked this achievement on my end without having to hit.
As this is difficult to achieve against the CPU, I'd say try to get it this way before Sony wise up and fix the requirement to unlock the intended way.

Hello ladies and gents. Today we are going to get the "I'm Walkin' Here!!" achievement in MLB The Show 21. The video below details exactly what to do, but I will also be explaining as best I can in text.
First, head over to the two links below and thumbs up exotic colors99's solution here:

These were the baseline for my guide. Unfortunately, they didn't work for me, but through some slider and attribute adjustments, I was getting 5 walks in the first inning on average...and you only need 8 for the whole game!
NOTE: This CAN be unlocked in the RttS and March to October modes, so I do recommend playing those modes fully before attempting this. You may unlock it without trying to.
You can also attempt to boost this online, either through Ranked or through Diamond Dynasty. I believe you can also matchmake through your friends list by hitting the "View/Back/Select" button and scrolling to friends. But this solution is for those who don't have that option.
First, go to Settings - Settings - Gameplay. LB around until these 3 settings are set as below.
Batting Difficulty - All-Star
Pitching Difficulty - Beginner
Gameplay Style - Casual
Back out and apply these settings.
Now return to Settings - Sliders.
Dynamic Difficulty - All the way LEFT
Human Foul Frequence - All the way LEFT
EVERYTHING else Human - ALl the way RIGHT
CPU Foul Frequency - All the way RIGHT
EVERYTHING else CPU - All the way LEFT
Fastball/Offspeed pitch speed - matter of preference. I prefer them all the way up, but for achievement purposes you probably want them all the way LEFT
All Errors - default
EVERYTHING below - all the way LEFT
Hit A a OK a few times to confirm these, and save them however you'd like.
Now for a time consuming task. Head to Create - Roster Control - Edit Player
We are going to be dropping attributes to zero for all of Colorado's pitchers, so stick with me. Hit RB to Starting Pitchers, then find all of them that have MLB in the League column.
Starting Pitchers
German Marquez - drop Stamina and BB/9 to 0
The other 4 - drop Stamina, H/9 and BB/9 to 0
(our goal is to keep German as the starting pitcher. If German isn't the top rated SP after you manipulate everything, go back to whoever is and drop the HR/9 all the way down, until German is the highest pitcher in the MLB on Colorado)
Same with Relief and Closing pitchers. Find all of them that have MLB in the League column.
Relief Pitchers - drop BB/9 to 0
Closing Pitchers - drop BB/9 to 0
Once done, back out and save your Roster however you would like.
Head to Exhibition Mode and select the right team. Pick the Colorado Rockies, and then pick the LA Dodgers and select them as the left team, and your team. Uniforms and Stadium don't matter. Make sure Fast Play is the presentation style and turn off the extra inning runner, though it likely won't come into play at all.
Pick whatever pitcher you want, but we don't focus on the pitching. We just can't simulate it or we void achievements, so pick your best one and advance, and the lineup will be fine as is. In my video, I had 3 hitters I had maxed to 99. I DON'T think this makes any difference, but if you are struggling, you could go to the Dodgers roster and increase the hitters to 99s as well. Keep that in mind.
Start the game, and and you may want to watch the video at about 9:30 here. We are going to be holding the Y button down when we are at the plate until the strike zone disappears. Then we will release Y and let the pitch come in. We will do this on every pitch. When you get to 2 strikes, you should attempt to protect the plate a bit. If you have a good eye for where the pitch is heading, you can try to let balls outside the zone go, and swing at pitches in the strike zone. At 2 strikes, a pitch in the strike zone will end the at bat anyways, so if you know the pitch is a strike, swing away. You may be able to foul it off and prolong the at bat, or even get a hit instead of striking out.
HOWEVER, don't stress too much. In my video below, I get 8 walks with 1 out in the second inning, so its not exactly deep into the game. You have plenty of time to work walks, so just stay patient and follow the advice above. Once you get 8 walks, the achievement will pop. I don't believe being Hit by a Pitch counts toward this, so be aware of this. To check how many walks you have, pause the game, go to Stats, Box Score, and the Dodgers, then check the hitters' BB column. When that reaches 8, the achievement pops.

True, a lot of these are best boosted, or at the very least, can be obtained by luck when going through the other game modes, but boosting is true of most MP achievements. Heck, I got the 16 player Far Cry 2 achievement by running 16 copies of the game myself. Some people don't have the ability to do so, or prefer SP methods, and that's what I've tried to offer in all my Guides instead of just saying "Find a boosting partner". I was able to attain all of the achievements, many of them multiple times on different accounts, on my own with these solutions, so that's why I shared them.
True, a lot of these are best boosted, or at the very least, can be obtained by luck when going through the other game modes, but boosting is true of most MP achievements. Heck, I got the 16 player Far Cry 2 achievement by running 16 copies of the game myself. Some people don't have the ability to do so, or prefer SP methods, and that's what I've tried to offer in all my Guides instead of just saying "Find a boosting partner". I was able to attain all of the achievements, many of them multiple times on different accounts, on my own with these solutions, so that's why I shared them.

Before I do this, I want to know that I can revert all of the roster changes--is there an easy "revert to default" setting or would I need to wait until the next roster update?

This is actually easier than it seems to be. You don't need to throw 4 balls in a row to walk the batter x8. You can instead call an "Intentional Walk"
To do this, while pitching, press cn_LB+cn_B when any batter is up. It will confirm whether or not you will want to do this. Select "Yes" and the coach will signal for the intentional walk. No pitches needed. Repeat this 8 times to gain this achievement.
It may take a bit for it to pop. Although the alternative, yet, slow method is to simply throw balls over and over again. A ball is any pitch located outside the strike zone or the box.
*Warning when doing this online: Doing this 9 times in a row while playing with an online friend may end the game prematurely due to the game thinking its grieving.
