It must be done in training in career mode.
5 differents trainings : landing, tilt, scrub, reflexes, curved speed.
You must have all the 30 stars (in 10 trainings) in 1 of the differents trainings. (3 stars per training if You succed).
For me the easiest is scrub.
You have a certain number of try by trainings, 5,7 or 10 for the last.
You have to find the good speed for each jump because You need a "perfect" (if You succed in the scrub, You can make it good, excellent or perfect). If You Jump and do your scrub to high, it can't be perfect. If You do it not higher, it doesn't count (under the green area).
You must do the scrub in the green area. You must begin your scrub in the slope, before You are in the air.
To do a scrub push the left analogic stick on the left simultany pushing the right analogic stick in the right if You want to inclinate on the left or left stick on the right simultany right stick on the left to inclinate on the right.

Thanks, good guide! I agree Scrubs was the easiest for me as well.
Two things I'd like to add:
1. You need 40,000 XP to unlock the last training
2. If anyone is wondering, the career basically never ends. You can always start another championship at the end of the current year so you get virtually an unlimited number of attempts.
