When you start the game up for the first time, you will be asked to create a rider. Simply set the gender to Male and this will unlock once you have finalised your look and details.

To get the other achievement (or to simply change your character), go to "Create" in the main menu, then Rider > Data and swap to the other gender, hitting to confirm and continue.
