How to unlock the Arena Fighter Certificate achievement in Monster Hunter Rise - Definitive Guide
These will become unlocked from Master Utshushi after beating certain monsters. You need to do all the arena quest monsters listed below once. Arena quests lock you into certain pre-set equipment that you choose between 5 loadouts. After beating these monsters in the normal hub/village quest, their respective arena quests will appear:
Kulu-Ya-Ku
Barroth
Royal Ludroth & Nargacuga
Barioth
Rajang
Volvidon & Basarios & Bazelgeuse
For Example: Once Barroth is defeated then his arena quest is available to do. For multi-monster quests you do need to defeat each of them.
After beating each quest listed above once the achievement will unlock

I ONLY play DB, I literally had no idea how any of the other weapons even worked and I managed to do these. Thankfully I understood basically all of the attack patterns so I think that was what got me through flailing away helplessly with the weapons that weren't DB lol Just be patient and smart. None of the monsters really have a large amount of health and carving them often gives you more first aid/potions etc to help fuel you in the multi enemy hunts. If you can beat village quests you can beat these as the health pools looked fairly comparable.

How many of the quests do you need to do and can the same one be done over and over?

This one just dropped for me.
It was a bit of a pain because you have to get out of your comfort zone and use weapons you're not familiar with. You can do the entire thing with 3 weapons: Light Bowgun, Sword and Shield and the Great Sword. Each of these is pretty simple and you'll have to learn at most a couple of combos for each. Each should require no more than a bit of practice time in the training area to get the basics down.
Here are the Arena Quests and which ones have these weapons.
1 Light Bowgun
2 Sword and shield
3 Great Sword
4 Sword and shield
5 Great Sword
6 Light Bowgun
For Light Bowgun you can put the monster to sleep with sleep ammo. Then run up to them and place barrel bombs and then lay down all your wyvern bombs too. Then you can switch to spread ammo and wake them up by shooting the bombs. Stay close to use your spread ammo, hold down left trigger and press A to dodge when attacked, use a wirebug recovery when knocked down to retreat and heal. Rinse and repeat. Light Bowgun is pretty forgiving IMHO.
For Sword and Shield you only need to know one basic combo, the shield bash. Run up to the monster and press B while holding forward on the left stick. (If you don't move the left stick, pressing B results in a different combo.) Doing this three times in a row results in 3 shield hits which does blunt damage. Hitting headshots with it will create stuns, while body shots will do exhaust damage. AFter doing three hits, press A +B together and you will do a spinning finisher for big damage to end the combo. Rinse and repeat. Hold down the right trigger to bring up the guard when attacked. Press B with the right trigger to do a counter that will keep you from getting damaged.
For Great Sword, run up to the monster when you have an opening and press and hold Y to do a draw attack. You want to hold it down until the weapon glows orange for maximum damage. If you overcharge it the damage will be reduced. If the monster moves and interrupts the charging, press B and you will go into a tackle that does impact damage, while also giving you extra damage reduction if you get hit. If you do manage to get off a Y attack, press B three times after that to do a combo and then press left trigger B to do a wire bug move that takes you out of danger and sheathes your weapon.
You can do all of these quests with only the moves I've described.
P.S. If you are doing this for the Might Bow Feather helmet just realize that beating Quest 5 will get you 1 or 2 Rajang coins while you need 3 Rajang coins to craft it. You will definitely have to beat him twice, maybe 3 times.
