There are different ways to do this as long as your elevation is higher than the monster in question, but the most consistent way is to use the insect glaive weapon. The first opportunity you should have against a large monster is the Great Jagras. With the insect glaive, use RT+A to pole vault in the air toward your target's back and attack, which provided your stamina isn't completely gone should allow you to mount the monster. From here you can repeatedly tap Y to slightly damage the monster, and hold RT to brace when it tries to buck you off or A to repel back toward it with your grappling hook if it does manage to throw you.

I've mounted several but this hasn't popped for me.. do you need to kill the mounted monster for it to pop? Edit - So the easiest way for me (noob) was level up a ways and then go back and take down a Great Jagras.. Once you mount him you will have to keep track of your stamina as well as the button prompts. Then he won't die, but fall over in pain and it will pop.

To mount a monster, you must attack it from the air. The easiest way to do this is to find a small rock you can climb, then jump off toward the monster and use a basic attack. If the attack lands, you'll mount the monster and begin attacking its back while riding it. There will be a short QTE section as you do damage and try to keep from being thrown off. Once this is over (no matter if you even did any damage) the achievement will unlock. There are a few weapons that have methods of launching you in the air for this purpose as well, but they can be difficult to learn.
