EDIT1 (quote from Chris8875):
"(...) I found that all the monsters can appear in any of the levels that match the requirements. Any of the commons can appear in any level that allows commons. Any mythical can appear in any level that allows mythicals, and so on.
It is just the luck of the draw, but if you are after a mythical, the last level (where you have a 10% chance of getting a mythical to appear) is the best to use."

right click and go to the scrapbook, 5th icon, the brown book with a keyhole on it. you can also scroll to the right on the main game screen.

If you get a monster that you've already evolved, is there a way to go back to the mission select screen? The only way I've figured out is to go to the shop, exit it, choose level again. Of course, you won't be able to play that level again (until the timer counts down). Is there a better/faster way?

Do some of these only appear on certain levels? I don't mean rarity. Been reloading (via advert) the last level over and over to get some majestics and haven't come across one in 30+ games.

Uranium Deposit - I'm now almost level 19 and only just got this yesterday after days of trying to get the last Mythical Monster on the forest level.

I found the best way to get the Mythicals is simply to replay 1-15 over and over until you get it - no science involved, just luck and repetition and probability. I used it as an excuse to get XP and level up, but it got boring quick (though I used the advert to do something else for 30 seconds!)

Just to clarify though - I found that all the monsters can appear in any of the levels that match the requirements. Any of the commons can appear in any level that allows commons. Any mythical can appear in any level that allows mythicals, and so on.

It is just the luck of the draw, but if you are after a mythical, the last level (where you have a 10% chance of getting a mythical to appear) is the best to use.

Just saw that someone commented here, but before I could help, somebody was faster in explaining. Yes, it is the luck of the draw.
For the mythical, I played the last 2 levels of forrest over and over again. But to make it not boring, I collected the legandary as well for "the Candy touch" achievement as they are the cheapest to use with 2 crystals.

I'm assuming you need only to evolve them, not capture them?

@Rosshk: My method of choice was to load a level, if it wasn't a monster I needed I would right click and hit the 2/3rd button (Story/Level select screen) then watch the ad to get back in. All together about one minute for each attempt.

For those wanting to boost this faster, apparently, having "ad block" extension installed on your browser makes the ad not load, so you can click te WATCH AD button once you exit the level and the Play button should instantly appear.

You need to evolve all monsters in a single world. There are a total of 35 monsters in each world. There is a counter for how many monsters you have evolved in each world in the world selection screen (XX/35 next to image of a little brown book). You can also check out the ones you have already evolved from the Monster Scrapbook, found in the Main Menu screen. There will be a ton of luck and chance involved in getting the specific monsters you need and evolving them. If you start a level and notice it is a monster you have already evolved, you can exit the game right away with no penalty (swipe down from the top of the screen and return to the Main Menu). This however is not recommend because this can be part of the grinding process towards reaching Research Level 30, the most time consuming achievement in the game. The easiest world to attempt this on is Forest. Getting all 5 of the mythical monsters will likely pose the biggest challenge and frustration, as even on Level 15 of Forest, there is only a 10% chance of getting ANY Mythical monster to spawn, let alone the right ones. Just keep at it and eventually you will get them all.

Below is a listing of all monsters cost to use, name, and color for the Forest world. Thanks to Nonnenteufel1 on TA for compiling the list!
