You can enter practice mode from the One Player section of the Main Menu, simply select Training > Practice, choose your fighter and once practice loads up the achievement will unlock.

From the main menu, select One Player option, then Training and select Practice, select your character and opponent. After selecting the map and before the practice starts, the trophy will pop right away.
