I got this achievement unintentionally when I was trying for a Diamond medal on Ski Cross Extreme (Course 7).
The best advice I can give for this is that you do not have to knock the other skiers over. You just have to knock into them so that they wobble. Best to try and get a decent start and knock a couple of them straight off the bat whilst they are level with you and then just drift down the course without attempting to do it at speed.
When another skier is near you, you can use your boost to aim straight for them if you need to however I found it easier just to gradually drift towards them.
The reason I suggested this course is that the AI seem to ski slower on this one compared to the other Ski Cross one.
The achievement will pop in game as soon as you have hit that fifth skier.

Is this achievement hit 5 skiers in one game or just hit 5 over many game?
