Fairly easy achievement. A gold does not depend on 'winning' the Skiing races but rather skiing through a high percentage of the gates.
You shouldn't be missing more than one or two if you're aiming for gold. Hitting the gates counts as a black mark on your run too.
On the bounty events be sure to collect as many tokens as you can whilst also completing your gates. Time is much less of a factor here.

I keep losing speed for no apparent reason. Any ideas why?

Try diving as you fly through thermals to trade height gained for air speed.
