A really easy way to get this achievement without actually beating the levels is to just load up each level in a local multiplayer game. Each level you play this way gets unlocked.
You don't have to finish the race. You can quit right after it starts.

just wanna mention that achievement pops AFTER you quit out. i didn't think it had worked for a second, but yeah, great solution.

Note that it only has to be done in RACE, Rivals, exploration and trick session don't matter as a few of those are still locked for me and I got it when the RACE ones were unlocked with this method. Thanks
