To get this achievement you need to earn a gold medal on the three new Stunt Race events from the Trick Jam DLC. To access the tracks press RB at the career menu.
The Stunt Race events are like the normal Race events from the base game. You simply need to finish the 3 laps in first place. The three races are rated S Class, so if you don't already have an S class bike, upgrade one of your own, or for $12,000 you can buy the second of the three new bikes which is S Class and speed based.
If you aren't concerned about having time stamps on your achievements, then I recommend doing these events offline. When I was connected to LIVE the moment I made my first mistake in an event there would be one AI that would rocket past me then if I didn't catch up to them quickly they would jump extremely far ahead, preventing all chances of catching up to them. Playing offline though, even after crashing several times I was able to not only stay in front, but actually lap some of the characters.

That's definitely not the case. They always keep up with me, online or offline.

That might have been changed in a patch since, but it was definitely the case when I posted the solution.

You need to earn a gold medal by coming in first place in all 3 Stunt Race events. Stunt Race is just another name for a normal race. The goal is to simply place first in the 3 lap races so pick a fast bike such as the Buzzard. The 3 events are the same as the previous Trick Jam tracks:
Egypt - Architects Ground
Australia - Cannon Bastion
Iceland - Industrial Meltdown
