Under career mode will be the Rivals Event type. First time you win in 1st place and get a Gold medal, the achievement will unlock after the event. If you don't get it the first lap, keep racing. You have 3 laps to come in first place. Some things that help with this are upgrading your bike and using boost in the right places. Once you get the hang of racing in this game, this will come pretty easily. The first Rivals you face don't have very good times or very good bikes. Good luck!
Barad
You will unlock rivals mode in career at skill level 3 or a little after. You will need to beat the developer's time of 1.21 for gold in the first Egypt event called Pharaoh's Tomb. It isn't too difficult, and a near perfect run should be around 1.16 so still a few seconds left to spare. Just use the jumps to trick and earn boost. Don't go for the gold coins as they do not add time but will just slow you down, you do not need any amount of them for the gold medal, just beat the time. You can beat any time in Rivals mode for this achievement, but the first one available is the easiest.
