A quick way to rack up races is to do the extreme 1200 campaign on the easiest difficulty. If you already played the game for a couple hours, you will definitely win most of the races, although for the achievement you don't need to win, just finish a race.
Also, I would suggest going for the other achievements first, and then come back and use my method to get the races you need.

With this you can get about 18 races in a hour, so just load it up and go too sleep I did this after I got every achievement in the game and I did it for like 15hrs

This will take 15 completed seasons to do. Try not to worry about this achievement, as counting the races up makes it longer for you. Try doing this in career mode (as I said, about 15 seasons) so you can work towards the other achievements.
