From the main menu, select time attack and complete a lap in any race that you like with any rider you like in any class you like.
Whether or not you have to beat a set lap time I don't know, but I don't think you have to.
For the lap to be valid, you need to make sure that you do not crash, if you don't then this should be a piece of cake.

it unlocks when you back out to the main menu , so quit out after one lap in case anyone wondering like I did
