How to unlock the We have a champion! achievement in Motorcycle Club - Definitive Guide
You need another player to start the multiplayer race.
Go to Race > Multiplayer > Player Match to create a lobby.
Now invite your friend or let him use the quick match option, because there are no other online players anyway.
As the description say you have to win 5 times in a row. If you boost this with another player you don't have to worry about a hard opponent, but as a newbie you maybe have problems to win against the AI. Maybe it's a good idea to play some singleplayer matches for some practice, but if you played some racing games before you probably don't need practice. Just give it a try. It's not that hard.

The We have a winner! trophy in Motorcycle Club worth 31 pointsFinish an online race in first place.
The Over-connected trophy in Motorcycle Club worth 33 pointsReach at least 60 minutes of online race time.
This would be fairly hard to do legitimately, but it's impossible anyway due to the online being non-existent. You will need a boosting partner for this.
Set up a private match by going Main Menu > Races > Multiplayer > Create Private Game. Now invite your partner by pressing on the d-pad, they will be able to accept the invite at their end, and join your lobby. Now take it in turns to win 5 races in a row. Private races do include AI opponents but they seem to be even worse than they are in single player, so they shouldn't threaten your progress.
