I found it faster to separate the hardcore mode and the watchpoints/garages. Before playing the map you can select the trucks by going to the top right and selecting vehicles as long as you don't have more stars than the balance requirement for said level. When going for the island hardcore, set up like this:

C-65111 (Equip with fireproof exhaust, fuel cistern)
C-4310 (Equip with crane support, log carrier with crane, medium log cart)

The key to this is understanding the winching. When you go to the advanced options, if it says DRIVE then the other vehicle will drive if you press and hold . If you press it while you are stuck and it is directly behind you it will push you. If it gets stuck you can switch it to say PULL and if you put your breaks on with you will help pull them out of the mud and towards you. I found the vehicle that follows (is winched) rarely got stuck.

You now need to winch the two together with the C-65111 in the lead (directly in front of C-4310). Drive passed the checkpoint and to the southern garage but don't worry about unlocking it. You can use other vehicles to unlock waypoints. From there you can drive to the nearest fuel depot and make sure to fill up C-65111's fuel cistern. Now you can drive from the nearest kiosk, use the crane on C-4310 to pick up the logs and have a second truck with you to either push you or help winch you up if you fall over. Bring 2 loads and you are done. There is no need to do long loads because it still takes 2 trips.

When you finish with the first lumber mill it's time for the second. Drive North from the lumber mill using the back roads to reach the first garage. Drive passed the lumber mill and you will be at a T intersection with two vehicles you can, and probably have, unlocked. Take a left and zig zag towards the closest kiosk. Bring back to the lumber mill and don't forget to refuel your vehicles with the cistern. Both vehicles need to be fueled since they are both driving.

Hardcore causes you to use more gas, normal mode you can make the trips without needing more fuel. It also seems to make you get stuck in the mud more so having a vehicle to push you from behind seems to negate the need to winch every tree just to move an inch. Hope this helps.

Note: If you want to complete the watchpoints, you can add the A-3151 to get faster to them. The following soloutin shows how to complete the map without them.

"Island" is obtainable in around 25-40min.
You are going to need 2 of the C-65111 trucks (orange one) . You select them before starting the level.
After choosing the proper truck and loading into the game, the first thing you are going to do is equipping the LOG CRANE CARRIAGE. If there is no option this means you have chosen the wrong truck. To make it a lot easier I am going to attache the maps with the routes I took.
This time you are not limited to fuel because you can fill up at the garage (the starting point).
Use the proper gear so you can use the differential. You are going to be a lot faster.
The second step, after equipping the log crane carriage is to tow both of the trucks.
This is the overview Drive past the Lumber Mill (north east), turn left and follow the path and you will arrive at the Log Station.
Put 12 short logs on each of the trucks (don´t attach the logs to the trucks).
The loaded truck should look like this. Now follow the path back you came from, to the Lumber Mill you past. Unload 8 short logs and attach the other 4 and submit your delivery. Do this two more times, untow the empty truck and switch to the other truck. Now drive back to the garage (starting point) and pull the handbreak. Your truck is going to be filled up with fuel. Now follow the path to the right side of the garage (south west). Repeat the step you did at the other Lumber Mill and you have completed the map.
