This is very simple to unlock.
When you start the game on level 1, there a total of seven crystals to collect (which look like emeralds)
Collecting your first one will earn you:
collect another four to earn this achievement.

Idk how it’s done this but if anyone has a similar issue then please inform me how to fix this if and when you get the Crystal Hunter II
Edit** in the space of myself writing all that I refreshed my TA to update and says I have them all but Xbox says other wise. May just be a bug.

I've never seen it to the point where you're missing achievements on Xbox, but I have heard people say that they've experienced similar issues. I did notice that I was missing 200 GS when I rescanned last night. If you're gaining Gamerscore too quickly it'll be missing on your profile, but usually gets corrected after 24-48 hours.
However if TA shows that you have the achievement, it's probably on your profile, and just a glitch on Xbox's end.
