Start any song and try to score that is about half of the beats in the song. For the first song "Wait For Love", this is around 400 to 500. I found best way is to play just the left and center lane on the first song and ignore the right lane completely.

Only focus on collecting notes from 2 of the 3 lanes. This should get you a 2 Star

The star trophies don't stack. You may get this naturally if playing on Hard. The easiest way to get this will be to play any song on standard difficulty. In the top right hand corner will be your score and a song progress bar. Run into a red bar between the 50%-75% progress and you should get two stars for the song.
