A holeshot is when you are in first place after the first turn in a race.
From the main menu select Grand Prix - MX1 - Official Riders- Antonio Cairoli - and I had luck with Matterley Basin track. Make sure AI difficulty is set to easy and physics level to base.
Hold down
about halfway in the starting block and then upon release press 
. Fall a little bit behind the pack and then cut to the inside and speed up. About halfway to the turn, slow up and cut inside along all the riders. The obstacle block is far inside the optimal racing line. Within 10 restarts you should get a holeshot! Achievement took about 30 seconds to pop during the race.
