If by the end of your run of this and you don't have this achievement it counts all of your previous runs. Theoretically you could replay the first one until you get it but that wouldn't make much sense so, here's what this achievement is looking for:
When you play the game you will be presented with 'poses' to do with the left analog stick. This is what the achievement is asking for so once you hit 20 total, and not 20 of the individual poses, but 20 sequences the achievement will pop. Pretty simple here

Thumbs up. You can check your progress in the house on the laptop. If you need a good venue to pick up those last few poses, I recommend Bearn - several sequences in this one.

There are 3 Competition events. Dressage, Jumping, & Cross Country. This achievement keeps track of poses specifically made in the Dressage event. If you're successful at every pose in a career you should have around 25, so you can afford to miss some. A dressage figure requires you to complete the pose flawlessly. The "pose" section of the Dressage event is a sequence of slow motion horse prancing with quick time event prompts utilizing of 
and 
motions. Once you've come out of the slow motion quick time event without making a mistake, that is one dressage figure completed.
If you don't have enough by the end of the game, replaying the last competition dressage section a few times and each time you should net about 5-6 dressage figures per go.
Important to note that they do not carry across over save files. And when you start a Professional run thorugh it will make you save into a new Career file or overwrite your previous one. Therefore they are not accumulative between Amateur and Professional playthroughs and must be done all in one playthrough.
The achievement will unlock mid round once you've successfully completed a dressage figure and you do not have to wait until the end of the event.
They are attached to your save file so restarting your xbox will not effect your progress.
You can check your progress in your room at the desk with the laptop. It is under "Your statistics" scroll all the way down to "Dressage figures done". Once this category reads 20 your achievement will unlock.
