This trophy is cumulative and can be done over multiple plays.

Gargoyles are found throughout the house, but most commonly on the roof and in the sewer/cave under the house. When you find one, you need to defeat it by just using your bare hands (no weapons). To make this easier, approach the gargoyle and jump over it to try to get behind it and start attacking it. When it turns towards you and stops to attack, get behind it again to avoid the attack and keep attacking until if crumbles. Rinse and repeat 30 times and the trophy will pop after the final one.

You can see how you are progressing by going to the trophy room and going to the spot where that trophy will be (6th from right).
