The online is very quiet in this game.
The quickest way I found to do this would be to set up a 2player private match on Aqueducts > simple race > boost madness on. You and your friend could race properly until 1 hits their 100 wins and then let the other win to finish off their 100 to make the time go quicker.
Aqueducts is a pretty simple track to learn and you can pretty much boost down the whole of the track. Once you get the hang of track you should start averaging times of about 2mins 15 secs to finish the race.
