A substitution is a defensive move you can employ while under direct attack. You can substitute punches, kicks, kunais, and I've even seen people substitute a grab attack. Just before being attacked by an enemy, if you press the B button in the direction the attack is coming from, you should disappear and reappear behind your opponent, costing you a little chakra, but setting you up for a great counter-attack.

So, to earn this achievement, simply don't press the B button for the duration of an entire match AND win.
