Pretty simple really. Go into Race Now mode, change the series type to Car Of Tomorrow race, select a short track like Martinsville and the change the lap settings to the lowest possible also change the penalties to off so you don't get black flagged and take pit stop options off like tire wear and damage. Then start the race.
You can either try and qualify and get a high position or you could just race from the back of the field. If you are in the front just drive first and cut the corners of the track and if you start from the back of the field plow your way though the field (If you turned the penalties off you should be fine) and take shortcuts to get ahead ass soon as possible.
