During the race, press start and go to photo mode, just press A to take the picture and save it to earn the achievement. Should be your first achievement.

This achievement is obtained in a race. You can be in Race Now, Career, Multiplayer, you name it.
As long as you are on the track, if you press the start button cn_start the option of "Photo Mode" will be available. Once in photo mode, just take a random photo with cn_A and it will ask you to save it. Once you name and save the file to your Xbox, the achievement will pop.
