As soon as the race starts up, pause the game and go to settings. Here, you can turn off the HUD completely and resume the race. It does not really make things harder, so you should have no trouble winning the race without it.
If the achievement does not unlock by resuming with your changed settings, try restarting the race directly after changing the hud to off.

Hi,
You should just add that the race needs to be restarted, not resumed. I resumed twice after changing HUD to off, no achievement. Finally I restarted a race, and it worked. Also it an be done in a private multiplayer race.

I remember getting the achievement just fine by resuming, but I'll add an amendment.
