Just set all user sliders up and computer sliders down. 1 min quarters on All - Star Difficulty. You can pick Celtics or Lakers. Soon as you win the game the achievement will pop up in a few seconds.
You do this for East vs West. Celtics vs Lakers and Rookie Challenge Trophy achievements.

Before you start, go to Options and change the difficulty to All-Star. Then go to Quick Match from the main menu and switch the Magic to the Celtics and the other team should already be the Lakers. This can be done with two controllers and with the sliders adjusted. You can change the quarter length to 1 minute.
