How to unlock the My All-Star achievement in NBA 2K11 - Definitive Guide
1.) Go into Game Mode options for My Player and change the Sim quarters to 1 minute and put 12 minute quarters on games actually played.
2.) Play legitimately until you average 25 points for around 10 games. If you just got the game and it is still new to you this should be easy, since you won't be tired of it by then.
3.) Start each game then press Start and Sim to the end.
4.) Sim games until you reach the All-Star break in mid February.
5.) Once you reach the All-Star game go into Game options and change your minutes played from 12, previously, to 1 minute quarters.
6.) Play the game, 4 minutes, and after the game is over the achievement will pop.
Basically what this does is limits the amount of time all other players have to accumulate stats. And because you are actually starting your game and then simming it, your simmed game has 12 quarter minutes to accumulate stats, leaving all other teams only 4 minutes a game. If your point average is high enough when you begin simming you could possibly do this until the end of the year to also get the MVP achievement.
I have 'not' confirmed this for 'Rookie of the Year' and 'My MVP' achievements but I assume it would work as well, as long as you play the following games after the achievement should be won. (I.E Last game of the regular season or 1st playoff game.)

What this means is that you are almost assured of leading the league in scoring, and other categories depending on the type of player you are.
Another important aspect to remember is that your popularity will get a boost when you take over as a starter in your team - meaning you are scoring more and getting more stats, minutes, exposure, etc - and is also influenced by the answers you give in post-game press conferences.
The right mix of answers will increase your league-wide popularity - arrogant answers help, but they can also hinder your rating too. If you have a great game, consider being a bit arrogant, and if your team wins, do the same.
But don't overdo it, as you will turn people off and not get votes.
Currently my point guard is about 5th in the guards ballot in the West, but fast gaining on the others in front of me due to my increasing stats and response at press conferences. I have about 2 months before the All Star game so there should be no problems making up the ground and being voted into the game.
To become an All-Star you need to have good stats leading up the All-Star game in February as voting starts in December, and have you league popularity up if you want to get voted to start in the All-Star game. It does help having your offense and defense awareness up to 80 or more in each category, but you can still be an All-Star even if you do not make the vote-in. If you do not get to start, you will get a notice telling you you did make the team as a bench player. You MUST play the All-Star game, and after the game the trophy will be yours.
This one can be a bit frustrating. As with My Rookie of the Year, I suggest playing through with 8 minute quarters and 1 minute simmed quarters to give your player lots of public votes. I was second in point guards when the All Star game came around and I didn't get selected because I needed more popularity around the league. At the end of every match are press conferences. To raise your league popularity, it is recommended that you answer Professional or Arrogance. Arrogance will be faster but can affect your Teammate Chemistry which is vital to keeping a good team mate rating in games.
If selected, you will be required to play in the Rookie v Sophomore game. Play well in this and you will be chosen to play in the All-Star game. If you miss out, just continue playing and if need be, play a second season as you will be almost guaranteed a spot. This achievement unlocks at the end of the All-Star game.
