It will unlock after your first "game". It is called "game" because it is actually a friendly game between players of your college team.

I just won the championship and somehow this one never unlocked

Did you play the match? I think you can avoid playing this, but I didn't know it will become unavailable to play after the championship.
Anyway, this is easy by just restarting. I will try to check if it is missable or not or if it glitched for you.

This is unmissable.
After picking your college, the next option the game gives you is to play your first game. Once this is finished, a cutscene will play out and then the trophy will unlock

Just a note: there's a quick method to getting all the games' trophies faster, whereby if you dash at a player with possession and press 
, you can get yourself fouled out by committing 5 fouls and still get the trophies.
HOWEVER, for this game, it's preferable if you play legit, make sure you score a lot of easy baskets and mark your allocated player closely. Otherwise, you have to spend real money to get coins for the

You'll earn this trophy after finishing your first game in MyCareer. This is the inter-squad game. It's one six minute half as oppose to the two six minute halves of the proceeding games. This is the only game you are not graded on and, thus, unable to obtain coins.
Should be noted, as you continue, that your draft stock does not affect trophies. You will earn all MyCareer trophies no matter how low your stock is.

After you pick a school, you will play a scrimmage match against other players from your school of choice. Play the match through and do your best; this achievement unlocks after the game no matter regardless if you win or lose.
