How to unlock the MAUI Invitational Champion achievement in NCAA Basketball 09 - Definitive Guide

First things first, you don't need to bother editing rosters, changing sliders or even changing the teams. Go into whichever tournament you need the win for, and on the screen where you pick the teams, just press X next to each team to play as every team. Simulate up to the final game, and 2 of your teams will be playing each other. Play this final game with 2 controllers to ensure you win it, time can be set to 2-minute halves.

This method works with all tournaments.

To play the MAUI Invitational go to Main Menu > Game Modes > Tournaments > Preseason Tournaments > MAUI Invitational Tournament. You only have to play the very last game of the tournament. You can play as every team in the tournament and simulate every game until the very last game. Do not forget to put the difficulty at All-Conference or higher. Set the Half Length at 2 minutes. You can also put the sliders in your favor.
