Start a Play Now game using a highly-rated team. Keep calling rush plays until your halfback passes the 100 yard plateau. Choose a weak team as your opponent if you are having difficulty.
This Achievement can also be unlocked in Dynasty Mode, and should come during a full season unless you are controlling a team with a very weak rushing game.
Option plays can often pick up big rushing yards if you pitch to the outside. Make use of jukes, spins, and stiff-arms to help gain yardage.

What I did was play as Ohio State. Their QB has great rushing stats so what I did was set up pass plays everytime. Everyone on the other team is either covering a receiver or on the line, so that leaves you wide open on either side to rush. I got this in the 1st quarter of a game against Texas, so that proves it doesn't really matter what team you play against. Just rush everytime with your QB, and it'll pop at the end of the game.
