Choose a 6 star team against a 1 star team and change the in-game sliders (Pause:Settings:Game AI) and have the User Offense to the maximum (100) and AI Defense to the minimum (0). This should decrease the difficulty of achieving. Also, for me when you're running and someone starts coming at you, I held B (to spin) and most of the time my character spun only at near contact.
