The Red Zone is the distances between each 20 yard line and the goal line. You have to prevent them from scoring a touchdown while they're on your side of the 50 yard line in their Red Zone. This can easily be accomplished by setting the skill level to Freshman and the timer to 1 minute quarters. You can also go to Gameplay settings from the start menu and select Penalties. Turn of offside and false start and run one of your players behind the quarterback before the play starts to ensure they never end up in the Red Zone.

I'm not sure if this will work if they get past the 50 and you hold them out of their red zone. I know you can't simply stop them on their side of the 50. I let them get into the red zone by taking a kickoff to me and running out at my 16 yard line. I rushed straight up the middle short of the 20 for 4 downs and turned over the ball. I then used the offside trick to continually sack them to 4th down. They went for a field goal (which I blocked for the block a field goal cheevo). At that point, I just scored and ran out the clock.

You first need to let the other team get inside your 20yd Line, then stop them from scoring a touchdown. Field goals are fine. Do this every time they get inside. If you're having trouble, just let them in once, then use no offsides and sack the QB every time they have the ball.
