How to unlock the Return Fumble for TD achievement in NCAA Football 08 - Definitive Guide
Since the strip ball (the A button) rarely works in this game, I found that the easiest way to get this is in combination with the punt block achievement. Put it on freshman, turn offsides off, and back them up until the punter is punting it from his own end zone. Start running from an offside position in order to get the block easier. If you don't get the block, punt it back and try again. When you do get the block in the endzone, your player will almost always recover it and it will be a touchdown.
Play in a Play Now game, and choose a strong team for yourself and a weak team for the CPU. Then set the difficulty to "Freshman" (easiest).
On Freshman difficulty the CPU will fumble a lot when they're on offense, so eventually you'll recover a fumble and be able to run the ball in for a touchdown. If you're having problems, increase the length of the quarters and eventually you'll get the achievement.
Note: this same strategy will work for the "Return an Interception for a TD" achievement.

This is basically "play until you get it." I have posted a strategy that I think is better.

While going for "Help Under 100 Yards" there is a good chance that during a sack the QB will lose the ball. Scoop it up and run it the other way for a touchdown.
