Play in a Play Now game, and choose a strong team for yourself and a weak team for the CPU. Then set the difficulty to "Freshman" (easiest).
On Freshman difficulty the CPU will throw lots of interceptions when they're on offense, so eventually you'll get a pick and be able to run the ball back for a touchdown. If you're having problems, increase the length of the quarters and eventually you'll get the achievement.
Note: this same strategy will work for the "Return a Fumble for a TD" achievement.
