What you'll have to do is watch what side of your end zone that the mascot is standing towards, and then make sure you score your touchdown on that side near your mascot.
You'll have to watch though, because the longhorn will only be in your endzone for one half of the game, so if you don't get it the first half, you'll have to quit and start a new game.

He's only at one half of the field, so it will be eligible in either the 1st and 3rd quarters, or the 2nd and 4th quarters. You don't have to quit and restart if you don't have it by halftime.

It seems he switches at random as I did not have him on the correct side of the field until the 4th quarter. You can super sim to whichever quarter you nee.
