If you don't want to dish out the cash, you can earn this by putting up solid performances throughout the tournament. Adjust sliders if you need to, and play at a difficulty that isn't too challenging for your skills.
You will unlock this Achievement as soon as you hit five stars. (I don't know if your rating can decrease, but it won't matter if it does once you reach five - you don't have to FINISH the tournament at five stars.)
I created a HB and rushed for 122 yards in my first game (3 stars), 200 in my second (4 stars) and 200 in my third to hit five stars.
Your best bet is to create a player that's going to see a lot of consistent action - a QB or HB. WR don't always get a consistent number of passes, and defensive players are often tough to play.

I've been doing it as a Defensive Tackle, so for up to 4 stars with two more games to go. I average 2 sacks and 8 tackles with 2-3 tackles for a loss so I should hit 5 stars.

If you make it all the way to the state championship game, then you'll be a 5-star prospect. But you have to win the first three games and play well to become that level of prospect.
Note: Because it's EA, you have the option of purchasing an unlock code to become a 5-star prospect.
