I figured out an easier way for this achievement. If you get the other team into a punt situation, turn off offsides and then block the punt, scoop it up and run it in for the TD.

Two controllers. Offsides on.
1. Punt with the second controller and choose punt block with the first controller. 2. Start offsides and try to block the punt.
3. If you fail, accept the offside penalty with the second controller and try again.
4. If the punting team gets too far up the field, run backwards to the 10 yard line
5. Eventually you'll block the punt, and usually one of your other players will pick up the ball and you can run it in for the score

Best way to do it if you just haven't been lucky like me is to start up an exibition game and choose Florida as your team then pick Army for the CPU. Make sure you turn off the Offsides rule. Then when the opposing QB has the ball take your SS and go behind the line of scrimmage and lay into him when hikes the ball. Should take no more than 5 tries to get him to fumble.
The method in Ball...Ball...Ball... is good for causing fumbles. If you manage to cause one, then have your nearest defender pick up the ball by running at the ball, then run as fast as possible to the endzone.
