This can be accomplished fairly easily against any of the non-Division I teams (like FCS East Rhinos). Pick any team that uses an Air Raid offense (I played with 1-star Mid Tenn State) and use a lot of draw plays or pitches to the outside; they tend to gain the most yards. With 5-minute quarters on Varsity difficulty, I racked up over 225 yards on the ground while playing a balanced mix or rush and pass plays.
If you are having difficulties, use a higher-rated team, but you'll be hard-pressed to find an easier opponent than the FCS teams.

Dangles
You need to pick a team that uses an Air Raid offense. You can be any team you like, just make sure you change their offense to Air Raid. Now that you know that, all you have to do is rush 100 yards. If you're having trouble, only focus on rushing and set the game to at least 5 minute quarters. Once you have rushed the 100 yards you can just super sim to the end.

Set up a game in Exhibition. Choose any team you feel comfortable using and set the Offense to Air Raid. Set the game on Freshman difficulty and give yourself a decent amount of time (I suggest 7 minutes.) Just keep running the ball with Shotgun or any other run plays that you can find until you get 100 yards. The achievement will unlock at the end of the game.
