You don't even have to play a full game for this achievement. Pick a game in season (I played with Alabama to get most of the season achievements.) Pick the appropriate playbook, then go to super sim. I set it with 10 minute quarter, but you can do more just to make sure you can get it. Should pop at the end of the game as long as you pick a pretty good team.

If you guys just want the quick solution, go with Alabama. They're 99 overall in every category so getting 200 yards rushing should be simple.

Pick any team you like and change their offense to One Back. Then use your HB and rush 200 yards. When you do, super sim to the end.

Set up a game in Exhibition. Choose any team that has a good running back, such as Alabama or West Virginia, and set the Offense to One Back. Set the game on Freshman difficulty and give yourself a decent amount of time (I suggest 7 minutes.) Use only run plays until you get 200 yards rushing. It does not have to be 200 yards with one player. The achievement will unlock at the end of the game.
