As another solution noted, there are three teams that use the Pistol: Indiana, Nevada, and Ohio. You need one of these three playbooks.
You don't have to use one of these teams, though. Go to Play Now, pick your favorite team (preferably one with a fast HB and QB) and advance until you get to the settings menu. Change the playbook to one with a Pistol. You can also choose a generic Pistol playbook. Then run the plays until you get the 100 yards with each.
If you're worried about having enough time, set your quarter length long. After you get your yards, if you don't want to play any more, go to Supersim and sim until the end of the game. The achievement will pop then.
...but it gets better!! If you set up your game with that playbook and good players, set your quarter length to 15 minutes, and sim the whole game, the achievement will pop as long as the team met the qualifications for the achievement. And all you have to do is watch!

Choose your favorite team, then choose the generic pistol playbook. Play on freshman difficulty and adjust all user sliders to 100 and CPU sliders to 0.
Since it's easier (at least I think it is) to gain yards with a HB than a QB, I ran enough plays to get my HB 100 yards...then I went into the depth chart and set one of my QBs at the top HB position. Then I did the same thing...ran regular running plays until my HB (who is now actually a QB) had 100. Once they both hit 100 just sim to the end of the game...achievement unlocked.

Unless there's an option to change the offense for a team, there's only 3 teams in the game that run a pistol offense: Indiana Hoosiers, Nevada Wolfpack, and the Ohio Bobcats.
Indiana: Overall B-, Offense B, Defense C+
Nevada: Overall C+, Offense B, Defense C
Ohio: Overall C-, Offense C, Defense C-
You can do this on freshman difficulty if you wish.

u can select playbook after u select team and hit A it pops up with choose your playbook and defense and when u switch playbook in between teams is changes to offense to that team and it tells u what offense that team runs.

Yeah, I saw that earlier today. Still, the schools should be listed since you won't know what playbook runs the pistol otherwise.

Pick any team you like and change their offense to Pistol. You have to get 100 yards both with your QB and HB separately (thanks to Blessorship for the clarification).

Set up a game in Exhibition. Choose a team that has a fast quarterback and running back, such as Ohio State or Virginia Tech and set the Offense to Pistol. Set the game on Freshman difficulty and give yourself a decent amount of time (I suggest 7 minutes.) Run the quarterback (I ran from Shotgun) until you get 100 yards and then do the same with the running back. The achievement will unlock at the end of the game.
