How to unlock the What a Weekend achievement in NCAA Football 11 - Definitive Guide
This is pretty easy. Should happen half-way through your Dynasty's seasons. Once you learn enough about each person, you can invite them to view the campus. When you do make sure that you know of at least 3 to 4 A to A+ categories that are High or above.
Invite them and then chose the top 3 (high - most) and the highest rated ones (A - A+).
Then make sure that you win your game and the achievement will unlock.

I can't get this to unlock, even after one game where I had 11 players give an A- or better rating.

this achievement is also possible by simming. i picked wisconsin and was going to sim to the bowl games, and about week 5 this achievement popped for me. didn't play any games and it still worked.

Go to the Recruit board and find 5 people that have an interest of at least 5 in your team. Ask them to visit one of your games. You need to get 5 people to visit one single game. I would recommend actually playing the game so you can blow out the other team. If you win by a lot, the recruits will all give you A- or better visit grades.
If you are using a good school, like Alabama or Texas, on Freshman recruiting difficulty, this should not be too difficult. Just make sure you have 5 recruits scheduled for one game, and make sure you know their preferences so you can schedule their visits for things they prefer and that your school is good at. I had about 7 recruits when I got it. I played the game just in case, and they all had at least A-.
