How to unlock the Let's Do It Again achievement in NCAA Football 12 - Definitive Guide
Since you're an independent team, you can choose who to play against every week. Just set them up against 5 different FCS teams and a few other really bad teams like San Jose State. Then simulate through the season. You should win at least half the games, and you'll be resigned for coach at the end of the season. Takes about 10 minutes and no effort at all.

Simple Solution: There is no simple way to actually "boost" this achievement. It's a craps shoot. I started 5 separate dynasties with 5 different teams before figuring some things out.
1. The lengths of contracts change EVERY time you start a new dynasty. One year, Cincinnati had a 1 year contract and I barely got fired by them. I went to try a new dynasty with Cincy again, and their contract was 2 years this time. I don't know why, but it seems that contract lengths are random. I got a 1-year contract with BC and that worked for me in the end. If you find it, I recommend it.
2. If you're trying to boost by simming your season, it's all out of your control. Before your season starts, if you have any rough games that you're able to switch out, then do it and switch in easier opponents.
3. If you're determined to do this by simming, the BEST way to do it is to pick a team that's really really good (Oklahoma, Oregon, Alabama, etc.) and choose to sim through the entirety of your contract. Will it take longer? Yes. But it nearly guarantees that you will be given the option to resign at the end of the year INSTEAD of trying over and over again with different dynasties. For a simple equation, there would be no difference between trying 3 different 1-year contracts and succeeding on your third attempt, and simming 1 3-year contract. The only difference is = At the end of the 3-year contract with the good school, you'll probably be offered the chance to resign.
The other option is to play a legitimate dynasty. If you're trying to do all of the other Dynasty achieves, then that end result is that you're more than likely going to be given that chance to resign.
It takes time, and if you're trying to sim over and over again.... Then it takes a lot of patience.

Anyway, it's a pretty simple achievement after your contract is up in Dynasty mode the team will asses your goals, pass failed or what. If they feel you've done enough to stay, right before the coaching carousel begins you'll have the option to sign with your team.

Should you excel in your coaching duties by meeting the majority of your goals and/or winning the national championship, the school will be so impressed with you and ask you to stick around longer. Accept the offer and the trophy will unlock.
The following schools have one year contracts: Air Force, Arkansas State, Cincinnati, Colorado State, Houston (recommended), Idaho, Iowa State, Kent State, Kentucky, Louisville, Marshall, Memphis, Mississippi State, North Texas, SDSU, SJSU, Toledo, Wake Forest, Washington, Western Kentucky.
The reason for the recommendation (Houston) is because your can more than likely sim the season and get rehired because of the offensive firepower in an underpowered conference. I simmed it and went 14-0, ranked #6 in the BCS, won the Liberty Bowl, and my QB got the Heisman because it's such a pass-oriented offense.
