I recommend using Barry Sanders in Heisman Challenge Mode and put him on a really strong team with a weak schedule like Florida State. Edit the house rules in your favor and select Freshman difficulty. Then start each of the few games and sim after the kickoff. Sanders should score a bunch of TD's. Do this for the first 4 games and then simulate to the Final game and check if you are in 1st place for the Heisman Voting . If so keep simming, otherwise start the game and simulate after the kickoff again and you should win the Heisman and the achievement.
